In the Kitchen

One of my husbands favorite meals is Baked and Stuffed Jalapenos. I got this recipe from a friend when we were still in the military.



You will need:

Fresh jalapenos
Bacon ( nitrite and nitrate free)
Chicken ( hormone and antibiotic free)
Cheddar Cheese ( I use grated)
Brown Sugar ( optional)
Salt (optional)
Steamed Rice (parboiled)
Cajun Seasoning (optional)






First I slice the peppers in half and seed them. The heat of a jalapeno is in the white meat, so the more meat, the more heat.




I then stuff the peppers with sliced chicken breast and cheese. You can lightly salt your chicken if you desire.



I then put the two halves back together, insert a toothpick, and wrap with a strip of bacon.





After I have done all the peppers I sprinkle with brown sugar and bake for an hour , uncovered, at 350 degrees.

Serve on a bed of steamed rice ( I sprinkle Cajun seasoning on the rice) and a side salad. Stuffed and Baked Jalapenos!




These are not pretty, but they are really delicious! I have substituted shrimp for chicken, they turned out good too!!
